Choconana peanut butter foldover

You know when I know something is good? When I take a gazillion photos of it and I'm unable to short list them. Picture spam in this post. I just HAD to capture all the angles of this dark chocolate and peanut butter stuffed, banana pancake fold over.


Do you see the peanut butter oozing out? *.*

The sweetness of the banana enveloping the bitter dark chocolate and creamy peanut butter...... Man it was a match made in heaven.

Ingredients

Pancakes:
1 mashed medium banana (120g)
1 egg
1 egg white
1/4 tsp baking powder
1/4 tsp vanilla extract
1 tsp cocoa powder

Filling:
2 tbs peanut flour
2.5 tbs milk of choice
(OR simply use peanut butter)
2 tsp dark chocolate

Method
1) Beat eggs in a bowl and add the mashed banana.
2) Add vanilla extract, baking powder and cocoa powder.
(The cocoa powder sticks to the mashed banana and it'll look a little like chocolate chips!)
3) Your pancake batter is complete. For the filling mix milk and peanut flour together in another bowl.
4) Pour all the batter into a pan on low heat.
5) When one side is almost done pour the filling onto the right uncooked side of the pancake. Sprinkle the dark chocolate on too.
6) Then fold over the left edge of the pancake to cover the filling and press down on the edges to seal the filling in.
7) Let it cook until the batter isn't all gooey anymore :-)
