SGFS: Fried Beehoon

This recipe is similar to the beehoon my family usually cooks so I would say its a "family recipe". You can't even tell its healthy! Oh I use half an egg in this recipe so if that's hard to do, just double the portion of the other ingredients and make 2 servings! If you want you can add chili  but I totally forgot to. Ooops. I ate it with chili powder though so it kinda makes up for it? :/


Ingredients
1 tbsp sesame oil
1/2 egg 
1/4 tsp minced garlic
2 tsp chopped shallot
1 shiitake mushroom, sliced
40g dry brown rice vermicelli
1/3 cup water and 1/2 tsp light soy sauce mixed together
70g baked chicken breast, shredded 
1/3 cup shredded carrot
1/3 cup shredded cabbage
Salt and white pepper to taste

Coriander to garnish

Method
1. Heat sesame oil in a pan. Beat egg and fry. Remove omelette from pan and cut into strips.
2. Using the same pan, fry garlic, shallot and mushroom.
3. Add all the remaining ingredients and fry until water has evaporated/absorbed.
4. Garnish with egg and coriander and serve.
