Spiced pear and fig quinoa bake

Say hello to the perfect Saturday morning breakfast ^^ Clean, healthy, dairy free (except the yogurt blob on top), easy, yummy. Baked quinoa is very versatile and you could easily change up the flavour! But if you're interested in a spiced pear and fig one feel free to follow this recipe:

Ingredients
1/2 cup cooked quinoa
1 egg white 
1/4 cup chopped pear 
1/4 cup chopped fig 
2 tsp honey
1/4 tsp cinnamon
1/4 tsp allspice
Optional: greek yogurt and  a little wedge of fig and pear to top it off. Oh and of course extra cinnamon for the finishing touch! 

Method
1. Preheat oven to 180C.
2. Beat egg white and mix all the ingredients together! 
3. Transfer into a glass dish. Bake for 25min.
4. Top with greek yogurt, a wedge of pear and fig, and lastly a sprinkle of cinnamon!

Hi all! Having my exams now :( I really have to plan out time to cook. Yesterday I had a great leg work out and HIIT session. My polar watch wasn't working though. Hasn't been working lately. Figured the battery in the sensor was causing the problem so I just replaced it :) 

Anyway, I knew it was a great workout because I've been absolutely ravenous ever since. Ate so much yesterday like 1800++ calories. The most in a really long time! And even after that I was hungry. Woke up at 3 this morning cos my stomach was crying to be fed. I forced myself back to sleep but got up at 4 again because I was that hungry. I felt like puking D: (ironic hah) So then I grabbed a leftover half strawberry cheesecake questbar (ITS DEVINE) and ate that before going back to snooze-ville until 6.30+.

Before I started eating healthy I loved the calzones from breadtalk! Well technically they're the only calzones I've ever eaten haha. Haven't had them in soo long! Anyway calzones are like inverted pizzas. The fillings are inside the dough instead of on top. Kinda like pizza pockets! 

Made these for dinner yesterday and they were sooo delicious! Though I think what pasta/pizza sauce and cheese you use makes a difference. I used organic roasted pepper pasta sauce from the brand 'naturel'. I think their basil one is nicer though! Oh and I marinated my chicken with smoked paprika before I baked it.


Papaya Pancakes

Hello and Happy Saturday! These papaya coconut pancakes are made using only 3 ingredients: papaya, eggs and coconut flour. They are paleo, gluten free, added sugar free, dairy free and really yummy. First time cooking with papaya and I'm really pleased with how these turned out. 

When I was younger I hated papaya. The big black seeds just grossed me out! Hahaha. But recently I was curious to how it tasted and decided to eat papaya for the first time in years.

    Healthy cinnamon raisin bagels anyone?


      FINALLY. I've figured out why all my recipes that use yeast have been failing. It's because 1) I'm using instant yeast. I need to use more and I don't need to proof it before baking. 2) I have been reusing the same small packet of yeast when the box states not to reuse an already opened packet. HAHA I SUCK. 

      Anyway so happy these turned out right ~ I kinda forgot to add cinammon till I had made the raw bagel shapes so I just dusted cinnamon over after boiling. And I wanted to use cranberries but the cranberries in my house had added sugar and I was like nuh uh. (Does finger snap head shake thing)

      Pumpkin Salmon Fried Rice

      Ingredients
      1/2 tbsp sesame oil
      1/4 tsp minced garlic
      3/4 cup cooked brown rice (leftovers taste better) 
      1/2 tsp light soy sauce
      1 tsp mirin
      1/3 cup steamed pumpkin, chopped
      80g baked salmon, flaked up (I used premarinated fillets. Garlic and herb flavour.)
      1 tbsp chopped spring onion 

      Method
      1. Heat oil in a skillet.
      2. Sauté minced garlic. Add in brown rice, mirin, soy sauce and fry. 
      3. Turn off fire and add in remaining ingredients. Combine everything together. Even when you turn off the fire it still kinda fries because the pan is hot.

      In my new home now! Everything's smaller. The house, the fridge, the gym... But I'll get used to it. I'm glad I have a regular oven now though! Enough with crazy convection ovens. Oh and my new rooms really pretty.

      My cat however is completely freaked out. He doesn't dare move about. He justs crouches in a corner and stays still :( 

      This pandan layer cake is super healthy, delicious, gluten free, added sugar free and paleo! You have to try it :)

      Because of the slice of my thumb I can't play the clarinet and have been excused from band for a month. So, I can go home early on Thursday for lunch!

      Today's lunch was chocolate protein waffles. Only 3 ingredients! Yay waffles for lunch.
