Strawberry frangipane galettes (vegan)

Mm galettes for breakfast. Galettes are tarts but are made without a tart pan so the sides are just folded over to keep the toppings in. I filled these spelt flour galettes with frangipane, an almond cream, and some fresh strawberries. A fairly simple recipe to make, but that's what I always say :/ 


Took a while to get this up as I've been awfully busy with school work although it is the march holidays :( I still need to share the recipe for my sweet potato kimchi sliders and teriyaki tofu fried rice! 


Tomorrow I'll get a nice break from work though. I'll be having lunch with the amazingly talented @tumblinbumblincrumblincookie and we'll go food prop shopping too! Can't wait :-)

This is a single serving recipe, however I doubled it to make two galettes. One for sampling :) 

For 1 galette
What you'll need
1/4 cup spelt flour (or ww pastry flour)
2 tsp coconut oil
2 tsp maple syrup
2-3 tbsp water (add 2 and see if you need more) 
20g blanched almonds or almond meal
1-2 tbsp soy milk
2 drops liquid stevia to taste 
1/8 tsp vanilla extract (just a drop)
1/8 tsp butter extract (just a drop!) 
3 strawberries, sliced

How to
Preheat oven to 180C
1- Mix spelt flour with coconut oil, maple syrup and water to form a ball of dough. Roll out dough into a circle of about 6.5 inches. 
2- Blend almonds to a powder, mix in milk, stevia, vanilla and butter extracts. 
3- Spread almond cream onto the circle of dough. Lay strawberries over and crimp the edges to seal up the tart. 


4- Bake for about 25 min on the highest rack in your oven. If it isn't brown enough, you can turn off the oven and leave the pastry inside a while longer.
