Hot cross buns hot cross buns one a penny~~
Easter is coming! If you guys have been to any grocery store lately, I'm sure you already know. However, I'm staying clear of the Easter eggs and bunny shaped peeps. Instead I'm gonna have these healthy, vegan, spelt, hot cross buns!
I decided to bake these up early, to give you guys time to try out the recipe before Easter :-) I used spelt flour, but it can be substituted with wholewheat flour.
Makes 6 buns
What you'll need
1 1/3 cups spelt flour
1/2 tsp cinnamon
Pinch of ground ginger
1/2 tsp instant yeast
1 tsp flax meal
Pinch of salt
1/4 cup room temp water
1/4 cup hazelnut milk
1.5 tbsp coconut oil, melted
1.5 tbsp maple syrup
1/4 tsp vanilla extract
1/4 cup raisins
More coconut oil or egg wash (1egg beaten with 1 tbsp water)
For drizzling:
Yogurt OR
Coconut butter OR
Tofu cream (puréed silken tofu with stevia and vanilla extract) OR
Cashew cream (cashews blended with a little water)
OR
Coconut yogurt
How to
1- Attach dough hook to a stand mixer. Combine dry ingredients in the mixer bowl.
2- In a separate bowl mix water, milk, 1.5 tbsp coconut oil, maple syrup and vanilla extract.
3- Start the stand mixer on low speed. Slowly pour in the wet ingredients.
3- Knead for a few minutes till a smooth ball of dough forms. If too dry/wet add a little water/flour tsp at a time. If too wet add a little more flour tsp at a time.
4- Brush a large bowl with coconut oil. Place the ball of dough into the bowl and brush with a little coconut oil. Cover with cling wrap and allow to rise in a warm place for 1h-ish.
5- When the dough has doubled, punch the dough down and knead in the raisins. Dust with more flour and roll the dough into a log. Divide into 6 equal pieces. Form each portion into a bun. Place buns onto the baking sheet lined with parchment paper and cover with cling wrap – allow dough to rise in a warm place for 1h.
6- Preheat oven to 180C. When dough has risen, brush tops with egg wash or coconut oil and bake for 25 mins, or until tops are golden.
7- Allow hot cross buns to cool. Use yogurt/coconut butter/cashew cream/coconut yogurt to drizzle crosses over.
