Eggs in a basket

Hello! This was breakfast today. Don't be fooled it's actually an extremely simple recipe. This felt so fancy and restaurant-esq my parents were way impressed lol. You can make this for the family and show off your culinary skills :-)


This was my first time making eggs in a basket and I think it went pretty well! But I feel like I should've used a thicker slice of toast. And more black pepper in the egg white, less in the yolk haha. Anyway enjoy!!

Ingredients
1 egg
1 slice wholemeal toast
Black pepper
2 slices turkey bacon
1-2 cherry tomatoes sliced
A few leaves of spinach (It kinda becomes less/flattens when you fry it up so you can use more)
1/2 tbs olive oil

Method
1) Toast bread lightly for 2-3 min.
2) Use a glass and a knife to cut a hole in the bread.
3) Heat 1/2 tbs olive oil in a pan.
4) Plop bread into the pan and crack the egg in the centre.
5) Sprinkle black pepper as the egg cooks.
6) Fry until the egg white turns opaque.
7) Fry turkey bacon and sauté tomatoes and spinach.
