Mac and cheese

It's been raining since midnight. Now its 1.37pm and its still raining. This is perfect for a warm comforting lunch on a cold day :-) Enjoy my healthy take on the classic Mac and Cheese! It's so good I raved about it to my entire family while eating lol.


Ingredients
2 oz quinoa elbows (slightly under half cup dry)
1/3 cup low fat cottage cheese
1/3 cup low fat shredded cheddar/mozerella cheese
1/3 cup low fat milk
1 tsp Garlic
1 tsp coconut flour
1/4 - 1/2 tsp Italian herbs
A few baby spinach leaves
2 strips turkey bacon

Method
Preheat oven to 200•C.
1) Cook pasta.
2) In a sauce pan on medium heat combine milk, cottage cheese, shredded cheese, garlic and coconut flour.
3) Chop turkey bacon into small pieces and add it into the sauce along with the pasta, Italian herbs and spinach.
4) Bake for 15min.

Top with black pepper before eating! ^^ You can choose to make it really simple with no turkey bacon and spinach but I like the flavour that all the add ins give!
