Sorry for the lack of posts! Its exam week! Anyway I made a clean and quick Curry Lime Quinoa for lunch on Sunday. Didn't share the recipe because I wanted to save it for my future ebook but now I''ve decided to just share it on here. That's right. EBOOK.

2nd post of the day! I post ALOT more on weekends than on weekdays.

So. Alfredo sauce is a creamy sauce made with loads of butter and cheese. This is my take on a clean Alfredo sauce chock full of healthy fat. It's really simple you basically blend everything together! Ate it with some pre cooked wholewheat spaghetti and paprika basil chicken that I grilled on Friday :) So all i did was make the sauce, stirred it through the pasta, added the chicken and microwaved! Simple. Only problem was my avocado wasn't that ripe and it was really stubborn and hard to blend -.-

Mint chocolate pancakes!


Hello all!

So if you've been following my Instagram, you'll know that I fell pretty badly yesterday morning while jogging! I scraped/cut my knees, right hand, right shoulder and chin. I also shattered my iPhone 4...... so I got a new iphone 5!!! Yay! But don't be like "omg you're so lucky you got a new phone!" because now I'm all injured, can't exercise, can't wear jeans, have to shower in pain and walk around with pus dripping out of my knees -_-

Was supposed to make these pancakes yesterday but I couldn't because I was bleeding everywhere. Instead my mum made me a power bowl for breakfast! <3 


Glad I was able to make them today though because they are so good! I mean WHO doesn't want mint chocolate pancakes. I LOVE mint and chocolate together and when people are like "Ew I hate mint choc" I'm like WHY!?


Topped with choc pb sauce and slim secrets mint choc fit balls. Only used about two fit balls to top the pancakes so I ate the remaining fit balls that I didn't use. They are THAT good :)


Love when you slice into a pancake stacks and it feels like cake!! This one was especially like that because of the green and brown layers...... :)


I'm leaving lotsa paragraphs because I need space to insert all my pictures from this mornings "photo shoot" HAHAHA. Anyway enough rambling I know you guys want the recipe!!



Ingredients
1 egg
1/4 cup oats
2 tbs apple sauce/cottage cheese
1 tsp agave/honey
1/4 tsp Baking powder
1 tsp cocoa powder
1/4 cup Spinach
1/4 tsp Peppermint extract

For sauce:
1 tbs Peanut flour
1 /2 tsp cocoa powder
Water until consistency is right

Method
1) Blend egg, oats, cottage cheese/apple save, agave/honey and baking powder together in a mini blender/food processor/magic bullet.
2) Pour half of the batter out and blend remaining with spinach and peppermint extract.
3) Mix cocoa powder into the batter that you poured out earlier.
4) Fry pancakes in olive oil or any healthy oil of your choice!
5) Mix your sauce together and pour over. Top with slim secrets mint choc fit balls :D

Note: I'm really bad at dividing batter into equal halves which is why I didn't have an equal amount of chocolate and mint pancakes!

Hello! Ever since my first microwaved mug muffin, I've made many different variations. The ingredients and steps for microwave cakes are usually really short which is why it seemed pointless to do a post for every one that I made. So in this post I'll be compiling all my successful microwave cake recipes for you guys. & in total (-: I like to make them in different shapes so I use mini baking pans mugs and bowls. That's why I can't call this post the mug muffin diaries ): Basic instructions for all the microwave cakes: Beat egg, add other ingredients and microwave for 2.5-3 min! Sweeteners are optional for all these microwave goodies! Feel free to play around and come up with your own recipes. Loads of fun I promise!

I've had so much good food lately it's been cray cray!

Had New Years Eve reunion dinner with my mother's side at a Chinese restaurant. It actually wasn't that unhealthy! Mostly meat dishes and only one rice dish at the end (which no one ate cos we were too full).

Yesterday morning I went to church. Then I visited my maternal grandfather's house. Ate yummy cookies and CNY snacks. Then I went to my uncles house and had lontong (with sayur lodeh) and a little bit of mee siam for lunch. Found out lontong and sayur lodeh are quite healthy yay.

Happy Chinese New Year's Eve!

Today I have a reunion dinner and tomorrow I have lunch and dinner at my aunties and uncles houses.

Also, it's Saturday morning now and I only return to school on Wednesday yay! On Wednesday we'll be having a class party which I WILL take part in! Pizzaaaaa.

So obviously I won't be eating very clean for this period of Chinese New Year. But that's totally ok! Didn't have any treats in Jan and this can be my Jan + Feb treat meals combined. Besides CNY is only once a year!

Inspired by @dieffs to make sweet potato hash, eggs and avo for breakfast. It's a paleo breakfast except that I added Tabasco on my avocado and I'm not positive if that's paleo but it sure is yummy tee hee.

Ok rewind to yesterday. Yesterday afternoon I was feeling so tired, not only sleepy-tired but like just tired of EVERYTHING. I was tired of waking up at the crack of dawn to make breakfast, go to school, have band until 6 and try to exercise, do homework and study between 7pm - 11pm. I WAS SICK OF IT ALL. But somehow I got through to the end of the day and I felt much better in the evening. I did a quick at home workout of squats (100), duck squats (100), lunges (100), pliƩ squats (100) and jumping jacks (50). Then I had my dinner and went to chill in bed. Point of this paragraph is: if your feeling sad and in a shitty shitty shitty mood. Just hang in there because like everything else in life, it will pass :-)

I looove French toast! This is a fun twist on French toast that you can make using the simplest ingredients :)

I use water over milk because I'm trying to take less dairy now (: You can google the benefits of a dairy free diet if you wish. But basically 75% of people are lactose intolerant, calcium in dairy isn't as good for you as you thought and dairy can actually be harmful.
