Strawberry Rice Puff (Krispie) Balls

Another Valentines Day treat for you guys!! Wish I could give each and everyone of you one but 1) they'll probably be sticky and melting by the time they reach you, 2) I probably don't have enough or 3) I might finish eating them before they reach you! They're so delicious :3 My dad who usually finds my foods bland LOVES these! You have to try this recipe out! Like any other Rice Krispie recipe, it's super simple. Basically mix everything together, roll into balls and freeze. 


You can use any kind of nut butter in replacement of cashew butter :) Preferably a light coloured nut? I used my own homemade cashew butter. All I did was blend 160g of cashews in my amazing food processor until it turned buttery. I blended for 1-2min, let the machine rest for a few minutes and then repeated (about 6 times) until the cashews released their oils and turned creamy. I made just enough for the recipe! :)

Made some simple baked sweet potato wedges wrapped with crispy turkey bacon! So good fresh out of the oven. Especially if you love sweet potatoes like yours truly. Turkey bacon may not be super healthy but it isn't too bad if you make sure it's low in fat, sodium and most importantly nitrate free. Besides its pretty delicious.

Have you ever wondered what would happen if Reese's Peanut Butter Cups had a baby with Bounty Bars? No you probably haven't but anyway, this is what would happen. Bounty cups! Crunchy shells of dark chocolate with a soft coconut filling! Such an easy recipe that requires minimal cooking and washing and ingredients. 3 ingredients, 3 steps.

I used little heart shaped silicone moulds from daiso which made them easy to remove :) you can also do them the traditional way in small cupcake liners I guess. 

RAW VEGAN: I used dark chocolate for this, but you can use raw chocolate made of cocoa powder and coconut oil and agave if you like! Maple syrup can be subbed with agave.

What you'll need
35g 85% dark chocolate
1/8 cup dehydrated shredded coconut (desiccated works too)
1 tsp maple syrup

How to
1. Prepare 6 little silicone cups or liners. Melt dark chocolate. I microwaved for 1 min, stirred, and repeated till it was melted and smooth! Pour a little into the cup and spread up the sides. Put in the freezer.
2. Meanwhile mix maple syrup and coconut. Remove cups from freezer and fill up with coconut!
3. Pour melted chocolate over the coconut to seal it in and freeze again until the chocolate is set. It'll take less than 5 minutes (okay don't hold me to this I'm estimating)! Remove from cups and GOBBLE DOWN.





Sun Dried Tomato Cashew Pesto

Happy New Year's Eve!! So this is rather different from regular basil, pine nut pesto BUT it's just as delicious if not better! It's so easy to whip up and tastes great on toast and crackers with some lemon juice. You can water down the pesto a little, stir it through some pasta and serve with some protein for a satisfying main course!



There's only one step for this recipe!! Just blend up everything hehehe. I love thyme and sun dried tomatoes btw :-)) Also hope y'all are having a good New Year's Eve!

What you'll need
50g sun dried tomatoes
15g (2 tbsp) cashews 
1/2 tsp minced garlic
1 tsp fresh thyme leaves 
2-3 tbsp water (your preference)

How to
1. Blend everything together well!

Gingerbread popcorn!

Sorry I haven't been uploading many recipes! They keep failing on me lately haha. Also I uploaded this late because I was lazy. Anyway this popcorn is healthy because it's almost fat free and is sweetened with maple syrup instead of corn syrup etc. I had no idea making popcorn was so simple. Basically just microwaving and mixing. Please note that you need to eat this fresh or it'll get kinda soft from the maple syrup after a while.

Gingerbread popcorn = Christmas movie night?? I don't have those other gingerbread spices like nutmeg, cloves or whatever but you can add them if you do :-)) 

Makes about 4 cups of popcorn 

What you'll need
3 tbsp corn 
3 tbsp - 4 tbsp maple syrup 
1 tsp ground ginger 
1/2 tsp cinnamon
Dash of allspice 

How to
1. Put corn in a big bowl and cover. Microwave for 1min 45s. Then remove the popped corn kernals (so they don't burn). Keep microwaving at 1 - 2 min intervals and removing the popped corn until all the corn has been popped. 
2. In a large bowl stir popped corn and maple syrup together. Then add in all the spices and combine well. Done!

Chocochip Gingerbread P-uffins (protein muffins)

This is my favourite kind of recipe. The kind that uses few utensils which makes for easy clean up, and the kind that is so super delicious! Healthy gingerbread protein muffins aka puffins, but with chocolate chips! Super low fat and high protein. 

Moist and delicious interior. 

Another addition to my Christmasy recipes :-) As always, hope you guys try this out!

Please remember to measure with measuring spoons where needed. Oat flour is oats blended into a flour. 

Makes 6 puffins.

What you'll need
30g vanilla protein powder (I used Tera's whey)
30g oats (I used instant quaker oats)
40g oat flour 
1/4 tsp allspice
1/2 tsp cinnamon
1/4 tsp baking powder
1/4 tsp baking soda

2 egg whites
170g non fat greek yoghurt ( tub of fage)
1/4 cup maple syrup or honey
1/2 tbsp grated ginger

30g cacao nibs
20g chocolate chips 

How to
1. Mix dry ingredients together. 
2. Beat wet ingredients. 
3. Pour wet into dry and mix together well. 
4. Fold in cacao nibs and chocolate chips. 
Preheat oven to 180C
5. Line your cupcake/muffin pan with paper liners and lightly grease the paper liners. Divide batter equally between paper liners. Bake for about 25min. Cool slightly before removing from pan. 

Ps: when I ate these fresh out of the oven the muffin kind of stuck to the paper, but somehow, after keeping it in the fridge and reheating it later, it didn't stick anymore lol

Reese's Pizza Pockets

Peanut butter and chocolate. I just never get sick of this combination. These Reese's pizza pockets are wonderful if you're like me. Peanut butter chocolate chip deliciousness wrapped up in cinnamon spiced pizza dough, baked to perfection and drizzled with maple sweetened chocolate syrup. 


Delicious fresh out of the oven. But today I had one chilled and it was really yummy too. Although I forgot to add sweetener to the filling, it turned out perfect, to me. If you prefer things sweeter sub the 1 tbsp of water in the filling with 1 tbsp of maple syrup. Also feel free to add more cacao nibs! Cacao nibs can be subbed with dark chocolate chips :) 

Can't take dairy? Sub cottage cheese with something of a similar consistency like mashed banana or something! You can even omit that and just add more peanut flour and pb and water ☺️ 

What you'll need
Pizza dough: 
1/2 cup whole-wheat flour
1/2 tsp quick-rising yeast
1/4 tsp cinnamon
1/3 teaspoon honey/brown rice syrup
5.5 tbsp water,
1 tsp coconut oil

Peanut butter filling: 
1 tbsp peanut butter 
1/4 cup peanut flour 
1/4 cup Cottage cheese
1 tbsp water
1 tbsp water OR maple syrup 
1 rounded tsp cacao nibs

Beaten egg

Chocolate syrup:
1 tbsp maple syrup 
1 tsp cocoa powder 

1. Mix flour, yeast and cinnamon together. 
2. Make a well in dry ingredients and pour 2 tbsp water, oil and brown rice syrup in. Knead. Add the rest of the water in tbsp by tbsp, just enough that you can form a ball of dough. Let the dough proof for 20 minutes. If the dough is sticky add flour, if it's dry and water! 
3. Make filling by mixing all the filling ingredients together.
4. Now roll out dough on some wax paper into a 6 x 6 inch square. Cut it into 6 squares. Then roll each piece out somemore until it's about 0.1-0.2 cm thick. 
Preheat oven to 230C. 



5. Fill up the pieces with the filling. Dampen the inner edges with water, Fold the squares over into triangles, and press down with a fork to seal. 


6. Brush lightly with beaten egg. Bake for 12 min. 


7. Mix sauce ingredients together (takes a bit of stirring) and drizzle over! Then stuff your face. 

P.S don't waste the egg. Please eat it after!

SGFS: Sweet Corn Pau

Hi! I love eating paus so it was about time I made a healthy recipe for one. I'm glad I did because I really enjoyed gobbling these up! I used a mixture of organic wholemeal and Hong Kong flour for this. I know the latter is not exactly healthy but a little won't kill you. This pau won't be as fluffy as regular pau because it's 50% wholemeal which makes it heavier. 

If you want a fluffier pau you can adjust accordingly by replacing some wholemeal flour with the Hong Kong flour. Hong Kong flour is low protein white flour that has been bleached a lot. It's very light so it makes buns, breads etc softer. If you really can't find it you can use white flour. 

The previous time I made this I used a bob's red mill gluten free flour and some corn starch instead of the HK flour and it was pretty okay too. You can do that if you wish. 

What you'll need 
Filling:
1 egg yolk
1/2 cup brown rice syrup (you can sub with honey, agave or maple syrup but I think you have to use less. In my opinion, brown rice syrup isn't very sweet)
1/3 cup milk
1/4 cup corn kernels 
3 tbsp coconut flour

Pau: 
3/4 tsp instant yeast
75 gm wholemeal flour
75 gm hongkong flour 
1/2 level tsp double action baking powder
1 tsp honey/brown rice syrup/agave/maple syrup
70ml water
1 tsp coconut oil
Extra ww flour if the dough gets sticky

How to
Filling: 
1. Mix egg, brown rice syrup and milk in a sauce pan. 
2. Heat over high flame until the mixture begins to bubble. Then over low heat simmer 13min, add corn kernels, simmer 3min longer. 
3. Then stir in coconut flour and let the mixture cool. It will thicken by the time you need to use it.

Pau: 
1. Mix wet ingredients. 
2. Mix dry ingredients.
3. Make a well in dry ingredients. Pour wet into dry ingredients and knead into a ball. Add flour if too sticky. Leave to proof for 1h.
4. Punch down. Split into 6 equal portions. Flatten dough into a disk. Wrap dough around corn custard filling. Rest for 20min.




5. Steam over rapid boiling water for 10min. Leave in steamer for 3 min after cooking. 



P.S The pau surface will be a bit sticky when its first done steaming. But when you let it cool and stuff it'll be fine!


Paleo Pumpkin Bread Roll

Paleo. Gluten Free, Dairy Free. Full of fibre. 


So amazing. But because of the pumpin addition, this is more moist than fluffy. The psyllium husk cannot be substituted as it gives the pumpkin bun, a bread like texture! It's fairly inexpensive for a packet that will last you a long time. You should be able to find this in the health food section of your grocery store :) Oh and the macros for these are great! 


What you'll need 
1/4 cup coconut flour
3 tbsp psyllium husk powder (no subbing sorry) 
Pinch of sea salt
1/2 tsp mixed dried herbs
1 flat tsp baking powder
4 egg whites (egg yolks can be used for making kaya, the next recipe I'll be posting!) 
2 tbsp hot water
Slightly under 1/3 cup/slightly over 1/4 cup of hot mashed pumpkin

Preheat oven to 180C. 
1. Mix all the dry ingredients in a bowl.
2. Add the egg whites in and whisk it all together. 
3. Add in the boiling water and mashed pumpkin, and combine well ensuring no orange/white streaks. 
4. Make 4 bread rolls, place them on a baking sheet and bake for about 55 mins.


Update I think 3 egg whites might be better texture wise. 

Breakfast "Sushi"

Saw this idea like last year but I'm only trying it out now. This recipe is so easy, versatile and fun to make. It's like sushi except the seaweed is a wholemeal wrap and the fillings are sweet :) I used a classic combination of strawberries, bananas and peanut butter but feel free to change it up and be creative!

What you'll need
1 wholemeal wrap 
1/4 cup peanut flour OR some peanut butter
1/2 banana 
3 strawberries 

How to
1. Slice fruit length wise. 
2. Mix peanut flour with water. Skip step if you are using normal peanut butter.
3. Spread peanut flour butter or peanut butter on to wrap. 
4. Arrange fruit on the peanut butter-y surface and roll up. 
5. Slice and serve with yogurt as "mayonnaise" and chia seeds as um sesame seeds?

OH MY GOSH THIS WAS SO GOOD ASDFGHJKL. Maybe because I'm bias to coconut and gula melaka :'D Another addition to my Singapore food series: healthy kuih dadar! This was so easy to make! Kuih Dadar is essentially a pandan (screw pine) crepe filled with sweet yummy grated coconut. I need moreeeee. I got my grated coconut fresh from the market. 

What you'll need
1 egg white
25 cm long pandan leaf 
1/8 cup oats 
20g Palm sugar 
1 tbsp water
1/4 cup grated coconut 

How to
1. Blend egg white, pandan leaf and oats. 
2. Heat up a pan. Reduce fire to small. Pour pandan batter over the pan and spread out as thin as possible! 
3. When the bottom is cooked. Flip and cook the other side. 
4. To prepare the filling, boil palm sugar and water in a small saucepan. When boiling immediately reduce to a very small fire and stir in grated coconut. 
5. Place filling on the pandan crepe like this: 
6. Fold over the left and right edges, then roll the whole crepe up from bottom to top. Should look like this: 

MAKE THIS AND THANK ME LATER BYE.

P.S Palm sugar is also known as coconut palm sugar or gula melaka. It is common in Asian countries. If you're from overseas you can get it from Asian grocery stores. It's a low GI sugar and is less processed than normal sugar. It has a really unique taste which I love :-) not to be confused with coconut sugar which is from the flower of the plant. Palm sugar comes from the sap!

Wow you guys have really been requesting for this recipe! Here it is finally. It is so simple and delicious. My dad really likes it heh. You can't really see the chia seeds in the picture but in real life you can! This is paleo which means its also... Healthy, clean, dairy free, gluten free and added sugar free!

Hello :) Mooncake festival is round the corner so I made these healthy cookie dough mooncakes. This was my first time making mooncakes so I'm so happy they turned out well! I used a mooncake mould I bought from bakeking at haig road. It was like $4+. They have an online store so you can buy it from there too if you live in Singapore!

You guys seemed really excited when I posted this on Instagram so I'm really happy my effort is appreciated haha. These are tricky to make but worth it. However, the filling is made of chickpeas so it has a different texture from the usual lotus paste mooncake. 

Made 8 mini mooncakes for me :-) I had extra filling btw. But I don't want to reduce the measurements in case it's too little and you don't have enough filling for your mooncakes :(

Today was certainly eventful. I sliced my thumb while trying to pry the cake pops off the plate. I bled everywhere Ew. But I still managed to cook lunch, do group work, go to the gym and cook dinner. Then my father saw the wound and my parents brought me to the doctor, who then sent me to the ANE (accident and emergency) in the hospital to get stitches. Got injected with general anesthetia (ow) before getting stitches done. First hospital experience with me as the patient, check.

SO EASY and so tasty and so healthy! Carrot cake cookies ftw. Makes 5 mini cookies. I drizzled some yogurt over these. You can also use cottage cheese/cream cheese mixed with water. Baked these in a convection oven. Increase time and temperature if using a normal oven.

Ingredients
2 crispbreads
1.5 tbsp peanut flour
Water/milk
1/2 giant strawberry
1/2 tbsp greek yogurt

Ever wanted to eat a giant peanut butter cup? Now you can! This isn't for my ebook because I don't want everything in there to be peanut butter and chocolate flavoured! Haha. You can taste the apple sauce a little but it doesn't bother me ^^

Ingredients
1/4 cup oats
1/4 cup apple sauce
1 egg
1 tbsp honey
1 tbsp unsweetened cocoa powder
3/4 tbsp peanut butter

Method
1) Blend oats into oat flour.
2) Add apple sauce, egg, honey, cocoa powder and blend somemore.
3) Pour into a mug and drop the peanut butter into the centre of the batter.
4) Microwave 2.5 - 3min and flip out onto a plate.
5) I topped mine with chocolate peanut flour butter :-)

You can probably sub apple sauce with other wet ingredients such as mashed banana, pumpkin purée etc! Enjoy!

Hi guys finally a recipe! Haha. I decided to jazz up my (almost) daily cottage cheese and pb ice cream and I got this! YUMTOWN. Didn't measure so this is an estimation ~

Ingredients
1/2 cup cottage cheese
2 tbs peanut flour
Water
1/2 tbs cocoa powder
1/2 tbs honey
3 sugar free marshmallows
1 tbs chopped pecans

Method
1) Mix all ingredients together. Add the water until you reach your desired texture.

Hello! Ever since my first microwaved mug muffin, I've made many different variations. The ingredients and steps for microwave cakes are usually really short which is why it seemed pointless to do a post for every one that I made. So in this post I'll be compiling all my successful microwave cake recipes for you guys. & in total (-: I like to make them in different shapes so I use mini baking pans mugs and bowls. That's why I can't call this post the mug muffin diaries ): Basic instructions for all the microwave cakes: Beat egg, add other ingredients and microwave for 2.5-3 min! Sweeteners are optional for all these microwave goodies! Feel free to play around and come up with your own recipes. Loads of fun I promise!
