Orange Lemongrass Soufflé

So today I made lemongrass orange soufflés that are not only processed sugar free but are also dairy free. They are so scrummy and soft it's kinda like poking a marshmallow. I'm so happy I succeeded on my FIRST attempt!! It was so exciting watching the soufflés rise :-)

YES I ATE BOTH! But that's because together, they are only about 250 calories. If I ate one that would be a horribly pathetic breakfast. I also had one of my tahini cookies on the side and some mango. Gosh I'm eating all these dessert-y thingys for breakfast T_T I guess I have a sweet tooth. 

What You'll Need
1 tsp coconut oil to grease ramekins
1/2 tbsp minced lemon grass
1 tbsp any milk
1.5 tsp coconut oil
1 tsp coconut flour
1 tbsp fresh orange juice
1/2 teaspoon freshly grated orange zest
1 egg yolk

1 egg white
1 tbsp honey

How to
1. Brush the insides of 2 ramekins with coconut oil (1/2 tsp each). Keep in the fridge.
Preheat oven to 200 degrees C. 
2. Mix minced lemongrass with milk. Microwave 1min. Then microwave another 1min. Try to mash up the lemongrass with a fork. 
3. Stir coconut oil, coconut flour, orange zest, orange juice and egg yolks into mixture until smooth.
4. Whisk egg white until frothy. Slowly add 1/2 tbsp honey and whisk. Then add another 1/2 tbsp honey and keep beating until soft peaks form.
5. Remove ramekins from the fridge. Fold half the egg whites into egg yolk mixture until combined. Gently fold in second half until well mixed. Transfer to the prepared ramekins, allowing 1/4-inch of space at the top.
6. Bake until risen and browned, 16 minutes.

Spiced Maple Chestnut Cake (Gluten Free) (Paleo)

Tis the season to be jolly! We are approaching the Christmas season friends! And this is the first in the collection of Christmasy recipes I'll be posting! 


This gluten free chestnut cake is so easy it literally took half an hour to get it in to the oven.

Its gluten free and paleo (apart from the icing)! Totally healthy. I used half boiled chestnuts and half roasted chestnuts. You can easily get preroasted chestnuts from a supermarket. They sell them as snacks in little 100g bags ☺️ 


Do note though, if I were to bake this again for my family (they absolutely loved this) I would add something to hold the cake together better. Such as chia or xantham gum or starch. 

What you'll need
Cake:
300g cooked and peeled chestnuts
3/4 level teaspoon baking powder
1/4 tsp cinnamon
1/4 tsp allspice
1/4 cup maple syrup
2 eggs separated 
3 tbsp coconut oil
1/4 cup water

Frosting:
1 tub Greek yogurt (170 g)
1 tbsp Maple syrup
(Not paleo, but can sub with cashew cream or coconut cream!) 

How to
1. Process chesnuts until it's like a clumpy flour. 


2. Mix baking powder and spices into ground chestnut. Beat maple syrup, oil, 2 egg yolks and water together. Pour into ground chesnut and combine well. 
Preheat oven to 160C. 
3. Beat egg whites until stiff peaks and gently fold into chestnut mixture. 


4. Transfer batter to a prepared 6 inch round pan and bake for 40min. Lower temperature to 150C and bake for 10min. Then 140C for 10min. ((Honestly though I think you should just do 150C for 45min or so. I'm sorry I don't feel like rebaking the cake just to tweak the temperature))


5. When cake is cool, flip it out onto a plate. Mix greek yogurt and maple syrup together, spread over the cake. Top with walnuts or anything your heart desires. Orange zest would go nicely I think.


Raw Caramel Apples!

Looks like I'm on a raw dessert roll? Okay so this won't be exactly like caramel apples but they're a easy alternative and have really few ingredients! 


What you'll need
2 small organic apples
6 pitted dates, 1/3 cup 
2 tbsp water 
Chopped nuts/sprinkles/anything


How to
1. Blend dates and water together.
2. Stab your apples with icecream sticks (or the end of disposable utensils) and spread date mixture on to them.
3. Dip in chopped nuts/sprinkles/anything and chill in the freezer for 5-10min before eating :) 

Broccoli Paleo Pizza Crust

Like who wouldn't want a green pizza. 

This is low carb pizza crust that is way better for you than a regular thick carb-y pizza crust. It's basically like a cauliflower pizza crust but with broccoli which I think, makes it look cooler. If you use a gluten free flour instead of oats it'll be gluten free! To make it paleo sub oats with almond meal ^^ 


What you'll need
2 cups chopped broccoli 
1 egg 
1 tbsp nutritional yeast (can sub with oats)
1 tbsp oats (can sub with other kinds of flour)
1 tsp herbs
1/3 tsp chili flakes 

Pizza toppings

How to
1. Chop up broccoli in a food processor till it becomes like "rice". You should get about 1.5 cups riced broccoli. 
Preheat oven to 150C.
2. Put the broccoli "rice" into a bowl and microwave for 4 minutes. Then dump all of it on to a tea towel and squeeze out as much moisture as possible.
3. Beat the other ingredients together and then mix in the broccoli "rice".
4. Put the entire mixture onto a piece of parchment paper. Spread out into a 7inch circle or whatever shape you want. Make the edges of the crust thicker to avoid burning. The thickness of the inner part of the crust should be 3-5mm.
5. Bake for 20min. Add toppings. Bake for 5min again.

Paleo Pumpkin Bread Roll

Paleo. Gluten Free, Dairy Free. Full of fibre. 


So amazing. But because of the pumpin addition, this is more moist than fluffy. The psyllium husk cannot be substituted as it gives the pumpkin bun, a bread like texture! It's fairly inexpensive for a packet that will last you a long time. You should be able to find this in the health food section of your grocery store :) Oh and the macros for these are great! 


What you'll need 
1/4 cup coconut flour
3 tbsp psyllium husk powder (no subbing sorry) 
Pinch of sea salt
1/2 tsp mixed dried herbs
1 flat tsp baking powder
4 egg whites (egg yolks can be used for making kaya, the next recipe I'll be posting!) 
2 tbsp hot water
Slightly under 1/3 cup/slightly over 1/4 cup of hot mashed pumpkin

Preheat oven to 180C. 
1. Mix all the dry ingredients in a bowl.
2. Add the egg whites in and whisk it all together. 
3. Add in the boiling water and mashed pumpkin, and combine well ensuring no orange/white streaks. 
4. Make 4 bread rolls, place them on a baking sheet and bake for about 55 mins.


Update I think 3 egg whites might be better texture wise.

Wow you guys have really been requesting for this recipe! Here it is finally. It is so simple and delicious. My dad really likes it heh. You can't really see the chia seeds in the picture but in real life you can! This is paleo which means its also... Healthy, clean, dairy free, gluten free and added sugar free!
