Peanut Butter Jelly Waffles!

Helloooo. Today's breakfast was healthy PBJ waffles! It consisted of sliced strawberries sandwiched between cinnamon waffles and topped with drippy melted peanut butter (and more cinnamon) ❤❤❤❤



It was such a photogenic and delicious breakfast. Lazy me only edits the top picture haha. These are so simple and they are like perfect for the waffle maker. The batter isn't too much that it over flows or you get half waffles haha.


What you'll need
1/3 cup oats
2 tsp coconut flour
1 egg 
1 egg white
2 rounded tbsp greek yogurt (I used fage)
1/3 tsp cinnamon 
1/4 tsp vanilla 
1 tbsp honey (optional) 

Toppings:
Peanut butter
Sliced strawberries
Greek yogurt 

How to
1. Blend oats into a flour.
2. Add in remaining ingredients and blend.
3. Cook in a waffle maker for 3 minutes and that's it! 
4. The peanut butter sauce is: 1 tbsp peanut butter + some water microwaved and mixed together :))

  1. If ino greek yogurt, what cn i sub with? Can omit the coconut flour? And isit possible to use e pancake recipies for waffles?

  2. Hi greek yogurt can be subbed with cottage cheese or mashed steamed/boiled cauliflower. Or even peanut butter. It keeps the pancakes moist. Coconut flour can be substituted with a little more oats. It's purpose was mainly to make the batter thicker :) Pancake and waffle recipes can be used interchangeably!
