Tiramisu Pancakes

Really sorry but it's exam period right now so this will be just recipe and no talk. These tiramisu pancakes are delicious and their nutritional profile is really good! I used cauliflower to make it moist resulting in fluffy low calorie pancakes :D The total is roughly 300 calories for me. Just after taking this picture, it started raining. So the inside-picture of these are crappy :( sorry. 


What you'll need
Pancakes: 
1/3 cup oats
1 egg
1 egg white 
1/4 cup cooked (steamed or boiled) cauliflower
1/4 tsp vanilla extract
1 tsp or more coffee powder 
About 1 tbsp honey to sweeten (optional)

1 tsp oil to fry (on a non stick pan)

Topping:
Greek yogurt (I used about 1/2 a cup)
Cocoa powder 
Raspberries 

How to
1. Blend cauliflower into a paste. Add in oats and blend into a flour.
2. Add in remaining pancake ingredients and blend everything together.
3. Heat oil in a pan. Turn to low flame.
4. Spoon pancake batter on to the pan, about 4 tbsp each. Covering the pan with a glass cover helps to cook it better.
5. Flip and cook the other side. Repeat for remaining pancakes. 
6. Spread greek yogurt onto the pancakes to serve and top with a sprinkle of cocoa powder and raspberries.
