SGFS: Nasi Lemak

Every Singaporean and Malaysian must enjoy a good nasi lemak every now and then.... 

I bring you clean and healthy nasi lemak! Coconut milk isn't unhealthy but the calories do add up if you over consume it. So I try to reduce the amount of milk while still holding on to some of the coconut-y taste that makes nasi lemak so lemak haha.

What you'll need
1/4 cup raw brown rice
1/4 cup coconut milk
1/3 cup water + more if needed
1 pandan leaf

1 small chicken breast
1 tsp light soy sauce
1 tsp honey
1/4 tsp minced ginger
1/2 tsp minced garlic
1/2 tsp lime juice
Dash of white pepper 
Lemongrass 

Otak 
Cucumber 
1/2 a boiled egg
Chili padi

How to
1. First soak the rice in the coconut milk and water in a pot for 1/2h. Then add in the pandan leaf, cover, and start boiling the rice. Add more water if needed. When the rice is halfway cooked you should turn the fire lower to avoid burning :)) remove the pandan leaf afterward. 
2. Preheat grill. Cut some slits in the chicken breast. Marinate with all the ingredients listed except lemongrass. 
3. Smash the lemongrass with the side of a knife and place it on top of the chicken. Grill 18min or longer if needed. 
4. Open the otak and use the banana leaf as a plate. Serve coconut brown rice on the leaf with the grilled chicken, cucumber, boiled egg and of course the otak. Top with chili padi and you're done!
