Chocolate PB Quinoa Cupcakes

Would you believe me if I said these chocolate peanut butter marble cupcakes were made of quinoa? And gluten free, added sugar free, dairy free and healthy? Well you better believe it. I had a bite of these fresh out of the oven and they were so fudgy and warm. MMM. Makes regular sized 6 cupcakes. 

What you'll need 
2 eggs 
1/3 tsp baking powder
1/3 tsp vanilla extract 
3 tbsp maple syrup
1 cup cooked quinoa 

1/4 cup honey 
Slightly under 1/4 cup unsweetened cocoa powder

1/3 cup peanut butter 
6-8 tbsp water 

How to 
1. Blend the first batch of ingredients together. 
2. Pour half out. 
Preheat oven to 180C
3. To the batter you poured out, mix in cocoa powder and honey. 
4. Add peanut butter and water to the batter left in the blender and blend together. The consistency of both mixtures should be roughly the same. If your peanut butter's pretty thick and not so oily you may use up to 8tbsp of water like I did. 
5. Prepare your cupcake pan. For each cupcake, alternately fill the mould with peanut butter batter and chocolate batter.
6. Bake for 30min or until a toothpick inserted comes out clean.
