Apparently, Elvis Presley loved peanut butter, banana and bacon sandwiches. So here we have it. Elvis pancakes! Fluffy vanilla maple pancakes layered with turkey bacon and banana coins, drizzled with peanut butter sauce. MMM. I promise you can't taste the cauliflower in the pancakes, plus they make the pancakes so fluffayyyy. I didn't even use baking powder!
What you'll need
1 egg
1 egg white
1/3 cup oats
1/4 cup steamed cauliflower
1/4 tsp vanilla extract
1 tbsp maple syrup
2 slices reduced fat, low sodium turkey bacon
1/2 banana, sliced
2 tbsp peanut flour
How to
1. Blend oats and cauliflower together to a paste. Add in eggs, vanilla and maple syrup. Blend everything together into a batter.
2. Fry the bacon in a non stick pan. Do not use oil as the bacon is already oily.
3. Use the bacon oil leftover in the pan to fry your pancakes. Over low heat, spoon 3 tbsp of batter onto the pan. Cook both sides of the pancake. Repeat 3 times to get 3 pancakes!
4. Layer pancakes with banana and bacon.
5. Stir peanut flour with water to get a sauce, and drizzle over pancakes.
