This is actually...... Strawberry cinnamon protein french toast, stuffed with orange cottage cheese and chocolate chips. Drizzled with peanut flour sauce and sprinkled with cinnamon and strawberries. As you can see the name is too long to fit the title haha.
I created this French toast for the #frenchtoastfrenzy competition hosted by @cookitlift @_matzi and @misarea! This my second time participating in an Instagram themed food competition :) I actually am really glad for participating because it pushed me to get creative!
This is the most EPIC and DELICIOUS french toast I've ever made and I'm so excited to share the recipe! Even better, it's healthy!
What you'll need
2 slices 100% wholemeal bread
1/4 cup cottage cheese
10g (a flat tbsp) chocolate chips (either semi sweet or dark)
1/2 flat tsp orange zest
4 drops liquid stevia
1 egg white
2 tbsp water
1/2 scoop strawberry protein powder (I used designer whey. It's so good mmmm)
1/4 tsp cinnamon
1 tsp olive oil
Sauce:
Peanut flour
Water
Toppings:
Cinnamon
1 chopped strawberry
How to
1. Mix cottage cheese, chocolate chips, orange zest and liquid stevia together. Keep in the fridge to prevent chocolate from melting!
2. Beat egg white, water, strawberry protein and cinnamon together.
3. Sandwich cottage cheese filling between two slices of wholemeal bread. Use a toothpick to hold the bread pieces together and soak the sandwich in the strawberry protein batter.
4. Heat 1 tsp of olive oil in a nonstick pan. Over medium heat fry both sides of the French toast sandwich.
5. Cut in half. Then drizzle with peanut flour sauce, and sprinkle with cinnamon and strawberry bits.
