Bacon wrapped sweet potato wedges

Made some simple baked sweet potato wedges wrapped with crispy turkey bacon! So good fresh out of the oven. Especially if you love sweet potatoes like yours truly. Turkey bacon may not be super healthy but it isn't too bad if you make sure it's low in fat, sodium and most importantly nitrate free. Besides its pretty delicious. 


Makes 1 serving
What you'll need
100g sweet potato
1/3 tsp cinnamon
1/3 tsp smoked paprika
About 2-3 slices of turkey bacon

How to
1. Scrub sweet potato and slice into wedges. In a covered container shake sweet potatoes wedges and spices together to coat the wedges well. 
2. Preheat oven to 190C. Slice turkey bacon lengthwise into 2 or 3 strips per slice depending on the width of the bacon. 
3. Wrap the bacon strips tightly around each wedge and place on a baking tray. Bake for 15min. Flip and bake another 10-15min or until the bacon is crisp and the sweet potato is cooked through. Enjoy! 

Before shaking together. 

Ready to bake! (I only used 2 slices of bacon so I didn't wrap all the wedges)
