Red Velvet Brookies!!!

Oh my goodness. These are good. And oh so healthy! The beautiful red comes from steamed beets not food colouring. Coincidentally, (or not) beets are also what keeps the brownie moist and dense! The the brownie part and the chocolate chip cookie layed over, are both made using oat flour, which means you can make this gluten free Ü 


Came across brookies (brownie cookies) on Pinterest and decided to healthify them ASAP because I wanted to get this post up before Valentines ❤ Day!! Hope you guys make this and try it out! Honestly it isn't too difficult and I think brookies, especially those that are red velvet AND healthy are pretty unique. 


Please use a measuring tbsp to measure cocoa powder so you don't add too much ^^ You want it to be RED. 


Makes 10

Red velvet brownie 
1/2 cup rolled oats
1 tbsp cocoa powder (unsweetened)
1 egg
1 cup chopped steamed beets (skinless)
2 tbsp milk
1/2 tsp vanilla essence 
1 tbsp honey

1- Grease loaf pan and line with parchment paper. 
2- Blend oats and cocoa powder in a small (but powerful) blender. 
3- Once reduced to a "flour" add in egg, beets, milk, vanilla and honey. Blend until smooth. Pour into loaf pan lined with parchment paper.



Chocolate chip cookie:
3/4 cup rolled oats
1/4 tsp baking soda
2 tbsp maple syrup
1 tablespoon coconut oil
3 tbsp milk
25g chocolate chips

1- Preheat the oven to 180 degrees celcius. Blend oats into oat flour. 
2- In a bowl, mix oat flour with baking soda, then add in wet ingredients. Mix in chocolate chips.


3- Get a small piece of dough and press the dough between your palms to flatten. Then lay the dough on top of the red velvet batter until the batter is completely covered. 



4- Bake for 45 minutes, until toothpick inserted comes out fairly clean. Let the brownie cool before slicing into 10 squares and serving. 

When I first removed it from the oven, I thought it was not baked through as the toothpick came out slightly sticky when I poked it into the brownie. However once I let it cool, it was fine and really delicious!! So don't worry ^.^ Enjoyyyy and have an amazing Valentines Day :)
