Cinnamon Roll Cheesecake

Happy Valentine's Day! Had a pretty boring one as I just got back from camp today and then I had school stuff :/ Didn't exactly feel the love. This cinnamon roll cheesecake is no bake and really so easy! When I say cinnamon roll, I mean cinnamon roll. It isn't just a cheesecake with cinnamon swirled through.

The twist: The base is made of bread. Or should I say, it is bread. Right now you may think it sounds crazy but if you think about it, this is kind of like a cheesecake over bread pudding. Sounds good to me lol.





ITS GOOD I PROMISE! The recipe makes 1 mini cheesecake and I had the entire cake for breakfast :D


What you'll need
1 slice wholemeal bread, torn into small pieces
1/4 cup low fat cottage cheese
1/3 cup non fat greek yogurt
2 tbsp honey
1 egg white
1/4 tsp vanilla extract
1 tsp cinnamon (measure with a measuring spoon)

How to
1- Grease and line a 4 inch round springform pan with parchment paper. Press bread pieces into the pan. Preheat oven to 350F.
2- Blend together cottage cheese, greek yogurt, honey, egg white and vanilla extract until well combined. 
3- Pour out about 1/4 - 1/3 of the batter and mix in cinnamon. Slowly combine and try to break up any clumpy bits of cinnamon so that the batter is one even colour. If you really need the colour darker you can add more cinnamon, but be careful, don't add too much!!
4- Pour batter into the prepared pan, alternating between cinnamon and vanilla batter. Drop or tap the pan against the counter top a bunch of times to get some air bubbles out of the batter. Helps prevent your cheesecake form cracking. 
5- Place the springform pan on a baking tray. Fill the baking tray with water about 1/3 of  the way up the sides of the springform pan. (waterbath method prevents cheesecake from cracking) Bake 15 to 20min, until just set. 
6- Let cool in the oven with the door slightly ajar for 20 minutes. Eat immediately like I did, or chill before serving.

    2. you said "alternating between cinnamon and vanilla batter", does that means i have two batter?

    1. Hi again :) you aren't dumb haha I guess I wasn't clear. For the bread you just press the torn up pieces into the base of the pan lined with parchment. The batter is poured over the bread. First you start of with a basic cheesecake batter but you separate a portion and add cinnamon to it. Therefore you'll end up with a cinnamon batter and the plain batter!

  2. can this be made with out a springform pan? I dont have one, but have glass ramikens?

    1. Yes you can but getting it out of the ramekins will be difficult unless you are planning to eat straight out of them?
