Sweet Potato Bacon Pasta

If you love sweet potatoes you'll love this! And bacon <3 <3 And so damn simple. I served mine with microwaved broccoli and baked chicken marinated in Mrs Dash Original Seasoning! 

What you'll need
40g dry wholemeal/brown rice/quinoa pasta
1/4 cup steamed sweet potato
1/4 cup water (or milk) 
2 slices turkey bacon, chopped
1/2 tsp garlic 
1 tsp fresh thyme leaves 
1/4 cup water from cooking the pasta

Method
1. Cook pasta. Save 1/4 cup of the cooking water.
2. Blend sweet potato with 1/4 cup plain water.
3. Fry turkey bacon pieces in a small non stick pot.
4. When the bacon is almost cooked. Add garlic and thyme. Sauté. 
5. Next add sweet potato purée and leftover cooking water. 
4. Cook until thickened and then stir in cooked pasta :) 


Jelly Crunch Bars (vegan)

Yet another vegan dessert :) raspberry and kiwi jelly with a layer of raw chocolate crunch on the bottom! Many of you guys are interested in the recipe so here it is! I used agar agar aka vegan gelatine. In singapore it's really easy to find as it's kind of like our local jelly. Agar agar is Malay for Jelly Jelly after all. It's made from seaweed! Hope you guys enjoy this recipe :) 

What you'll need 
Crust: 
1/4 cup walnuts 
1/2 cup oats 
8 pitted dates (1/2 cup) 
1 tbsp cocoa powder
1 tbsp water

Jelly
1 tbsp agar agar powder 
1/2 cup milk
2 tbsp maple syrup 
1/2 cup raspberry purée
1/2 cup kiwi purée

How to
1. Blend crust ingredients together well and press into a loaf pan lined with wax paper. Place in the freezer.
2. Stir agar agar powder in milk and maple syrup. 
3. Divide into two portions. Mix the first portion with the kiwi and the second portion with the raspberry. 
4. Simmer the kiwi mixture for 2-5 min until agar agar has dissolved. Pour the kiwi mixture over the crust and set in the fridge for 20min or until it firms up. 
5. Simmer the raspberry mixture for 2-5 min until agar agar has dissolved. Then pour the raspberry mixture over the kiwi mixture and set for 20min. 
6. Slice into 10 squares and serve!

Raw Caramel Apples!

Looks like I'm on a raw dessert roll? Okay so this won't be exactly like caramel apples but they're a easy alternative and have really few ingredients! 


What you'll need
2 small organic apples
6 pitted dates, 1/3 cup 
2 tbsp water 
Chopped nuts/sprinkles/anything


How to
1. Blend dates and water together.
2. Stab your apples with icecream sticks (or the end of disposable utensils) and spread date mixture on to them.
3. Dip in chopped nuts/sprinkles/anything and chill in the freezer for 5-10min before eating :) 

Pandan Waffles X Raspberry X Chocolate

Best. Flavour. Combo. Ever. 

Seriously so asdfghjkl yummy (and healthy). But that's only if you like pandan. If you don't, go away. No I kid. These are also gluten free! 

My waffle maker seems to have lost its non stick properties. Parts of my waffle got stuck to the pan, 2nd time now! The other day I wanted to make marble waffles but they stuck ughhhhhh >:( At least I managed to cover up pretty well so you can't tell (I hope). Anyway enjoy the recipe! 

Ingredients 
Waffles:
1 egg
1 egg white
1/4 cup coconut flour 
1/4 cup milk
1 tbsp greek yogurt 
1 tbsp maple syrup 
2, 25cm pandan leaves, chopped

Toppings: 
1/4 cup raspberries
1 tbsp plain yogurt
Cocoa powder, water, liquid stevia 
2 butter cookies 

How to
1. Preheat waffle maker.
2. Blend waffle ingredients together. 
3. Cook waffles 2-3 min.
4. Microwave raspberries for 20s. Mix in yogurt. 
5. Mix cocoa powder, water and liquid stevia. 
6. Drizzle waffle with raspberry yogurt, chocolate sauce and top with butter cookies.

P.S I know butter cookies aren't healthy but they are sooo good and honestly two cookies won't do you any harm.


Raw Banoffee Bars

I rarely <s>cook</s> make raw desserts but I'm so glad I did today! This was so easy and so good mmmm. Especially because the weather was SO SO SO SO HOT. I used both pecans and almond slivers on the top because I ran out of pecans. But honestly I think it looks nicer when there are a mixture of nuts ^^ 

What you'll need
Crust:
1/4 cup almonds
1/2 cup oats
8 bam dates, pitted (80g)

Cream:
2 medium mashed banana, sliced (230g w/o skin)
1/3 cup cashews

1/4 cup chopped pecans

How to
1. For the crust combine almonds, oats, and dates in the food processor and process until the almonds are chopped up and the mixture holds together when squeezed. Press the mixture into a loaf pan lined with parchment paper. I used another piece of parchment paper when I pressed so that the crust wouldn't stick to my fingers. Also I used a flat container cover to press the crust. 

2. Blend cashews as fine as possible. Add bananas. Process until smooth then pour cream over the crust and set aside in the freezer for 2h.

3. Sprinkle pecans into the banana cream then freeze for 3h. Slice into 10 bars. 




Broccoli Paleo Pizza Crust


Like who wouldn't want a green pizza. 

This is low carb pizza crust that is way better for you than a regular thick carb-y pizza crust. It's basically like a cauliflower pizza crust but with broccoli which I think, makes it look cooler. If you use a gluten free flour instead of oats it'll be gluten free! To make it paleo sub oats with almond meal ^^ 


What you'll need
2 cups chopped broccoli 
1 egg 
1 tbsp nutritional yeast (can sub with oats)
1 tbsp oats (can sub with other kinds of flour)
1 tsp herbs
1/3 tsp chili flakes 

Pizza toppings

How to
1. Chop up broccoli in a food processor till it becomes like "rice". You should get about 1.5 cups riced broccoli. 
Preheat oven to 150C.
2. Put the broccoli "rice" into a bowl and microwave for 4 minutes. Then dump all of it on to a tea towel and squeeze out as much moisture as possible.
3. Beat the other ingredients together and then mix in the broccoli "rice".
4. Put the entire mixture onto a piece of parchment paper. Spread out into a 7inch circle or whatever shape you want. Make the edges of the crust thicker to avoid burning. The thickness of the inner part of the crust should be 3-5mm.
5. Bake for 20min. Add toppings. Bake for 5min again.

SGFS: Gula Melaka Kaya

I haven't had kaya in ages. (Kaya: coconut egg butter) Unless you count that one bite of a bun filled with kaya... Anyway, I made some homemade healthy gula melaka kaya :) The traditional way uses whole eggs and is extremely tedious. It involves stirring kaya for over an hour. This kaya however, can be made in minutes! It's absolutely delicious, even better than the regular kind you can buy in bottles at the grocery store. My family loves it! Gula melaka is coconut palm sugar. I used pre-crushed-up gula melaka but yours may come in a "rock" form, so be sure to chop it up first. 


It goes lovely with slightly burnt toast. 

What you'll need
3 pandan leaves
Splash of water 
1 pandan leaf
3 egg yolks, stir together
200ml full fat coconut milk
70-80g gula melaka

How to 
1. Blend 3 pandan leaves with a splash of water, about 1 tbsp (or more if you really need to). 
2. Squeeze pandan leaf mixture through a sieve and get out as much liquid as possible. This will be your homemade pandan extract. 
3. Put coconut milk, gula melaka and pandan extract in a sauce pan, stir and simmer. Let gula melaka dissolve completely.
4. Next pour some of the hot coconut milk mix in to the egg yolks and stir. Then pour that back into the rest of the coconut milk mix in the pot. Add in 1 pandan leaf. Stir as the mixture cooks. When the mixture thickens slightly, turn heat to low. 
5. Now let the kaya cook and stir every so often until it becomes thick and can coat the back of a spoon easily. This will take 5-10 minutes :) 


6. Let the kaya cool before transferring into a bottle. It can be stored in the fridge for a week or so. Makes about a cup of kaya.

Paleo Pumpkin Bread Roll


Paleo. Gluten Free, Dairy Free. Full of fibre. 


So amazing. But because of the pumpin addition, this is more moist than fluffy. The psyllium husk cannot be substituted as it gives the pumpkin bun, a bread like texture! It's fairly inexpensive for a packet that will last you a long time. You should be able to find this in the health food section of your grocery store :) Oh and the macros for these are great! 


What you'll need 
1/4 cup coconut flour
3 tbsp psyllium husk powder (no subbing sorry) 
Pinch of sea salt
1/2 tsp mixed dried herbs
1 flat tsp baking powder
4 egg whites (egg yolks can be used for making kaya, the next recipe I'll be posting!) 
2 tbsp hot water
Slightly under 1/3 cup/slightly over 1/4 cup of hot mashed pumpkin

Preheat oven to 180C. 
1. Mix all the dry ingredients in a bowl.
2. Add the egg whites in and whisk it all together. 
3. Add in the boiling water and mashed pumpkin, and combine well ensuring no orange/white streaks. 
4. Make 4 bread rolls, place them on a baking sheet and bake for about 55 mins.


Update I think 3 egg whites might be better texture wise. 

PBJ Twice Baked Sweet Potatoes

So a while back I made these savory twice baked sweet potato. It was absolutely divine. Here is the sweet version of it :) I'm sorry this isn't a very creative flavour haha. Like I said on instagram, this tastes like a PBJ sandwich in a sweet potato! Doesn't that sound good? (you're meant to say yes). Anyway let me know if you guys try this one out :D

What you'll need
1 200g sweet potato (though you only need half)
1 tbsp peanut butter
1 tbsp cottage cheese
1 tbsp strawberry jam (I used st dalfour)
1/4 tsp cinnamon

Chopped strawberries
1 tbsp peanut flour mixed with water (not crucial)

How to
1. Wash and scrub your sweet potato. Poke holes in the skin. Bake in a preheated oven at 190C for 1h.
2. Scoop out the insides and mash with peanut butter, cottage cheese, strawberry jam and cinnamon.
3. Spoon mash back into sweet potato skin.
4. Bake for 15min more.
5. Drizzle with peanut flour sauce and chopped strawberries.

Breakfast "Sushi"

Saw this idea like last year but I'm only trying it out now. This recipe is so easy, versatile and fun to make. It's like sushi except the seaweed is a wholemeal wrap and the fillings are sweet :) I used a classic combination of strawberries, bananas and peanut butter but feel free to change it up and be creative!

What you'll need
1 wholemeal wrap 
1/4 cup peanut flour OR some peanut butter
1/2 banana 
3 strawberries 

How to
1. Slice fruit length wise. 
2. Mix peanut flour with water. Skip step if you are using normal peanut butter.
3. Spread peanut flour butter or peanut butter on to wrap. 
4. Arrange fruit on the peanut butter-y surface and roll up. 
5. Slice and serve with yogurt as "mayonnaise" and chia seeds as um sesame seeds?

OH MY GOSH THIS WAS SO GOOD ASDFGHJKL. Maybe because I'm bias to coconut and gula melaka :'D Another addition to my Singapore food series: healthy kuih dadar! This was so easy to make! Kuih Dadar is essentially a pandan (screw pine) crepe filled with sweet yummy grated coconut. I need moreeeee. I got my grated coconut fresh from the market. 

What you'll need
1 egg white
25 cm long pandan leaf 
1/8 cup oats 
20g Palm sugar 
1 tbsp water
1/4 cup grated coconut 

How to
1. Blend egg white, pandan leaf and oats. 
2. Heat up a pan. Reduce fire to small. Pour pandan batter over the pan and spread out as thin as possible! 
3. When the bottom is cooked. Flip and cook the other side. 
4. To prepare the filling, boil palm sugar and water in a small saucepan. When boiling immediately reduce to a very small fire and stir in grated coconut. 
5. Place filling on the pandan crepe like this: 
6. Fold over the left and right edges, then roll the whole crepe up from bottom to top. Should look like this: 

MAKE THIS AND THANK ME LATER BYE.

P.S Palm sugar is also known as coconut palm sugar or gula melaka. It is common in Asian countries. If you're from overseas you can get it from Asian grocery stores. It's a low GI sugar and is less processed than normal sugar. It has a really unique taste which I love :-) not to be confused with coconut sugar which is from the flower of the plant. Palm sugar comes from the sap! 

Fluffy Elvis Pancakes

Apparently, Elvis Presley loved peanut butter, banana and bacon sandwiches. So here we have it. Elvis pancakes! Fluffy vanilla maple pancakes layered with turkey bacon and banana coins, drizzled with peanut butter sauce. MMM. I promise you can't taste the cauliflower in the pancakes, plus they make the pancakes so fluffayyyy. I didn't even use baking powder! 

What you'll need
1 egg
1 egg white
1/3 cup oats
1/4 cup steamed cauliflower
1/4 tsp vanilla extract
1 tbsp maple syrup
2 slices reduced fat, low sodium turkey bacon
1/2 banana, sliced
2 tbsp peanut flour 

How to
1. Blend oats and cauliflower together to a paste. Add in eggs, vanilla and maple syrup. Blend everything together into a batter. 
2. Fry the bacon in a non stick pan. Do not use oil as the bacon is already oily. 
3. Use the bacon oil leftover in the pan to fry your pancakes. Over low heat, spoon 3 tbsp of batter onto the pan. Cook both sides of the pancake. Repeat 3 times to get 3 pancakes!
4. Layer pancakes with banana and bacon. 
5. Stir peanut flour with water to get a sauce, and drizzle over pancakes. 

Chocolate PB Quinoa Cupcakes

Would you believe me if I said these chocolate peanut butter marble cupcakes were made of quinoa? And gluten free, added sugar free, dairy free and healthy? Well you better believe it. I had a bite of these fresh out of the oven and they were so fudgy and warm. MMM. Makes regular sized 6 cupcakes. 

What you'll need 
2 eggs 
1/3 tsp baking powder
1/3 tsp vanilla extract 
3 tbsp maple syrup
1 cup cooked quinoa 

1/4 cup honey 
Slightly under 1/4 cup unsweetened cocoa powder

1/3 cup peanut butter 
6-8 tbsp water 

How to 
1. Blend the first batch of ingredients together. 
2. Pour half out. 
Preheat oven to 180C
3. To the batter you poured out, mix in cocoa powder and honey. 
4. Add peanut butter and water to the batter left in the blender and blend together. The consistency of both mixtures should be roughly the same. If your peanut butter's pretty thick and not so oily you may use up to 8tbsp of water like I did. 
5. Prepare your cupcake pan. For each cupcake, alternately fill the mould with peanut butter batter and chocolate batter.
6. Bake for 30min or until a toothpick inserted comes out clean. 

Strawberry French Toast stuffed with Orange Cream and Chocolate


This is actually...... Strawberry cinnamon protein french toast, stuffed with orange cottage cheese and chocolate chips. Drizzled with peanut flour sauce and sprinkled with cinnamon and strawberries. As you can see the name is too long to fit the title haha. 

I created this French toast for the #frenchtoastfrenzy competition hosted by @cookitlift @_matzi and @misarea! This my second time participating in an Instagram themed food competition :) I actually am really glad for participating because it pushed me to get creative! 

This is the most EPIC and DELICIOUS french toast I've ever made and I'm so excited to share the recipe! Even better, it's healthy! 

What you'll need
2 slices 100% wholemeal bread 
1/4 cup cottage cheese 
10g (a flat tbsp) chocolate chips (either semi sweet or dark) 
1/2 flat tsp orange zest 
4 drops liquid stevia 
1 egg white
2 tbsp water 
1/2 scoop strawberry protein powder (I used designer whey. It's so good mmmm) 
1/4 tsp cinnamon 
1 tsp olive oil

Sauce:
Peanut flour 
Water 

Toppings: 
Cinnamon
1 chopped strawberry

How to
1. Mix cottage cheese, chocolate chips, orange zest and liquid stevia together. Keep in the fridge to prevent chocolate from melting! 
2. Beat egg white, water, strawberry protein and cinnamon together.
3. Sandwich cottage cheese filling between two slices of wholemeal bread. Use a toothpick to hold the bread pieces together and soak the sandwich in the strawberry protein batter. 
4. Heat 1 tsp of olive oil in a nonstick pan. Over medium heat fry both sides of the French toast sandwich.
5. Cut in half. Then drizzle with peanut flour sauce, and sprinkle with cinnamon and strawberry bits. 

Super Banana Split

I've never sliced a banana length wise before. I'm glad I did though, because it made the base of a lovely and easy breakfast! You can top the banana split anyway you like. This is just an idea you can try out! I went crazy with superfoods and got a super banana :D Should have added some chia seeds too lol. 

What you'll need 
1 banana 
Peanut butter (I used peanut flour butter) 
Toppings! I used: almonds, goji berries, blueberries, dark chocolate and coconut :) All sorts of nuts and seeds and anything at all would be perfect. 

How to 
1. Slice the banana length wise.
2. Smother with peanut butter.  
3. Can creative and decorate. 
4. Eat. With. Hands.

2 Ingredient Peanut Butter Crepes


2 Ingredients?? Oh my goodness it doesn't get easier than this haha. And so versatile. To this basic recipe, you can add cinnamon, a sweetener like maple syrup, cocoa powder, vanilla extract or anything your heart desires ^.^ Please go ahead and try it out I'm sure you have the ingredients in your kitchen! Makes 2-3 crepes.

Ingredients
1 egg 
1 tbsp creamy peanut butter 
2 tbsp water 

How to 
1. Beat everything together well. I suggest beating the egg and water and then working in the peanut butter :) 
2. Heat some oil in a pan over medium heat.
3. Pour some batter on to the pan and spread it out evenly in a thing layer. Cook. Flip. Cook the other side. And repeat for the rest of the crepes! 
 

Grilled Cheese French Toast


Simple easy and delicious what more could you possibly ask for? This was my first savory french toast ever and I am not regretting it one bit!



What you'll need
2 slices of cheese 
2 slices of wholemeal bread 
1 egg 
1-2 tbsp water
Dried herbs 
Olive oil
Cherry tomatoes for garnishing

How to
1. Make a cheese sandwich by sandwiching two slices of cheese between the bread. Use two toothpicks to hold the sandwich together. If you hold on to one end of the sandwich, cheese should not fall out.
2. Next beat the egg, water and herbs together. 
3. Dip the entire sandwich in. Soak up as much batter as possible. Remove the toothpicks.
4. Heat some olive oil in a pan. If you're pan is non stick use a tsp, if not maybe a tbsp.
5. Fry the sandwich over medium heat until the egg battered bread is cooked! If you slice the sandwich open and the cheese hasn't melted, the microwave does wonders.
