SGFS: Nasi Lemak

Every Singaporean and Malaysian must enjoy a good nasi lemak every now and then.... 

I bring you clean and healthy nasi lemak! Coconut milk isn't unhealthy but the calories do add up if you over consume it. So I try to reduce the amount of milk while still holding on to some of the coconut-y taste that makes nasi lemak so lemak haha.

Tiramisu Pancakes


Really sorry but it's exam period right now so this will be just recipe and no talk. These tiramisu pancakes are delicious and their nutritional profile is really good! I used cauliflower to make it moist resulting in fluffy low calorie pancakes :D The total is roughly 300 calories for me. Just after taking this picture, it started raining. So the inside-picture of these are crappy :( sorry. 


What you'll need
Pancakes: 
1/3 cup oats
1 egg
1 egg white 
1/4 cup cooked (steamed or boiled) cauliflower
1/4 tsp vanilla extract
1 tsp or more coffee powder 
About 1 tbsp honey to sweeten (optional)

1 tsp oil to fry (on a non stick pan)

Topping:
Greek yogurt (I used about 1/2 a cup)
Cocoa powder 
Raspberries 

How to
1. Blend cauliflower into a paste. Add in oats and blend into a flour.
2. Add in remaining pancake ingredients and blend everything together.
3. Heat oil in a pan. Turn to low flame.
4. Spoon pancake batter on to the pan, about 4 tbsp each. Covering the pan with a glass cover helps to cook it better.
5. Flip and cook the other side. Repeat for remaining pancakes. 
6. Spread greek yogurt onto the pancakes to serve and top with a sprinkle of cocoa powder and raspberries.

Helloooo. Today's breakfast was healthy PBJ waffles! It consisted of sliced strawberries sandwiched between cinnamon waffles and topped with drippy melted peanut butter (and more cinnamon) ❤❤❤❤

Apple pie in an apple! So simple and delicious I think I'm in love. And it's been so cold lately a warm breakfast is really welcome. Well healthy apple pie is always welcome if you ask me!

Wow you guys have really been requesting for this recipe! Here it is finally. It is so simple and delicious. My dad really likes it heh. You can't really see the chia seeds in the picture but in real life you can! This is paleo which means its also... Healthy, clean, dairy free, gluten free and added sugar free! 

Cookie dough mooncakes!!

Hello :) Mooncake festival is round the corner so I made these healthy cookie dough mooncakes. This was my first time making mooncakes so I'm so happy they turned out well! I used a mooncake mould I bought from bakeking at haig road. It was like $4+. They have an online store so you can buy it from there too if you live in Singapore!

You guys seemed really excited when I posted this on Instagram so I'm really happy my effort is appreciated haha. These are tricky to make but worth it. However, the filling is made of chickpeas so it has a different texture from the usual lotus paste mooncake. 

Made 8 mini mooncakes for me :-) I had extra filling btw. But I don't want to reduce the measurements in case it's too little and you don't have enough filling for your mooncakes :(
