Carrot cake cookies

SO EASY and so tasty and so healthy! Carrot cake cookies ftw. Makes 5 mini cookies. I drizzled some yogurt over these. You can also use cottage cheese/cream cheese mixed with water. Baked these in a convection oven. Increase time and temperature if using a normal oven.


Ingredients
1/4 cup oats
1/4 cup blanched chopped almonds
1 tbsp maple syrup
1 tbsp coconut oil 
1 tbsp grated carrot
1/2 mini packet of raisins
1/4 tsp ground ginger
1/4 tsp cinnamon
1/4 tsp allspice

Method
Preheat oven to 150C
1. Blend oats, almonds, ginger, cinnamon and allspice together. Don't over blend or it'll become sticky. It can have some unblended bits cos it adds to the texture of the cookie!
2. Mix in remaining ingredients.
3. Form 5 tbsp sized cookies.
4. Bake for 15min or longer if needed.
