White Peach and Lemon Blondies

Peaches are in season right now which means they're super juicy and sweet! I knew I had to bake something with them before they went out of season so this is what I came up with. 

This is my first time baking blondies ever. These white peach and lemon blondies are gluten free, added sugar free and have more protein than the regular blondie. They're also quick, clean, easy and super delicious! Crazy moist. Hard to believe they're healthy really ._.


Ingredients 
400g can chick peas drained 
3 eggs 
1/3 cup honey
1/2 tsp baking powder
2 tbsp olive oil
1 tbsp Lemon zest 
3 tbsp lemon juice
1/4 tsp vanilla extract
2 medium white peaches, diced 

Method
Preheat oven to 180C
1. Blend chickpeas.
2. Beat eggs with honey, baking powder, oil, lemon zest and lemon juice. 
3. Combine mushed chickpeas and eggs. Fold in diced peaches. 
4. Pour into a prepared 9x9in baking pan and bake for about 35 - 40 min.


P.S I topped it with fage 0% greek yogurt
