Chia jam filled pancakes

This was so fun eating. Nom. Imagine cutting into vanilla pancakes and have jam oozing out. All natural 2 ingredient strawberry chia jam.



Before I cut her up. Fage greek yogurt looks so much like whipped cream I love it.




Yum its like cutting a cake whee.

Ok enough picture spam sorry.

Ingredients
1/3 cup rolled oats
1 egg 
1 egg white
1/4 cup steamed cauliflower
1/2 tbsp honey
1/4 tsp vanilla extract 
1/4 tsp baking powder
1 tsp chia seed
1/3 cup sweet strawberries (if not add sweetener)
1 tbsp olive oil

Method
1. To make chia jam blend the chia seeds and strawberries together. Let sit in the fridge for 1h minimum. I left mine overnight!
2. Blend oats into oat flour, then blend cauliflower in and make sure there aren't any chunky cauliflower bits left. Then add in the eggs, honey, vanilla extract and baking powder and blend somemore.
3. Heat one tbsp olive oil in a pan. Turn the heat down to low.
4. Spoon 2-3 tbsp of batter on to the pan. Add 1-2 tsp of chia jam in the centre of the pancake. Spoon another tbsp of batter over to cover the jam. When the bottom and edges are cooked, flip the pancake over carefully. Repeat again for the 2nd pancake (:
