SGFS: Clean Coconut Curry

Singaporeans need their curry. Absolutely love how easy and delicious this chicken curry is! It's single serving like almost all my recipes. Enjoy xx


Ingredients
1 shallot
A stalk of lemon grass (white part only)
1 clove of garlic
1/2 tsp ginger
1 chicken breast, chopped
1 tbsp olive oil
1/2 cup water
2.5 tsp curry powder
Dash of Cinnamon
Pinch of salt 
Coriander leaves 
Curry leaves
2 tbsp coconut cream

Method
1. Blend shallot, garlic, ginger and lemongrass together. 
2. Rub over chicken breast pieces and marinate for half an hour or longer. 
3. Mix curry powder with water. 
4. Heat olive oil in a pan. Fry chicken until cooked through. 
5. Add curry powder and water mixture, cinnamon, a pinch of salt, coriander leaves and curry leaves.
6. Cover and simmer 15 min. Stir in coconut cream.
